Banana Crumb Muffins

Alright, how yummy do these babies look?!



Guess what, they taste even better than they look! These banana crumb muffins are soo delicious and so easy to make! They make awesome breakfast, lunch, snack, dinner, late night snack... whenever! I made them two weeks in a row and they are gone in just a day!




This recipe makes about 10 muffins-


Banana Crumb Muffin


Ingredients
3 ripe bananas, mashed
1/3 cup butter, melted
1 teaspoon vanilla extract
1 egg
1/4 cup white sugar
1/4 cup brown sugar
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Crumb:
1/3 cup brown sugar
1 tablespoon all-purpose flour
1 tablespoon oats
1/2 teaspoon ground cinnamon
1 tablespoon chilled butter, cubed


-Preheat your oven to 375 degrees.
-Beat together butter, mashed bananas, egg, vanilla, white and brown sugar.
- In a separate bowl, mix in the dry ingredients (flour, salt, baking powder, baking soda)
-Stir in the dry ingredients into the wet, until incorporated. Divide batter in pre-greased or lined muffin/cupcake tins.
-In a smaller bowl, mix together all the crumb ingredients until mixture appears coarse. Sprinkle crumb mixture on top of the muffins.
-Bake for 18 mins, cool for 30 minutes before serving.





Serve with coffee, tea, or a glass of cold milk. Perfect <33
