Vietnamese Summer Rolls

Spring is right around the corner and a lot of people are watching what they're eat for the season. Friends, I have a beautiful dish for you-

Vietnamese Summer Rolls! This dish is starting to be very common even in American restaurants, I've even seen it at the Cheesecake Factory! The dish is really light and really simple. Here it is-

Please excuse my wrapping skills, I am still working on that...

You will need-
12 cooked shrimp
8 round rice wrapper
2 ounces of rice vermicelli
mint leaves
Thai basil leaves
cilantro sprigs
4 romaine lettuce leaves

All you need to do is dip each rice wrapper in warm water for a few seconds, lay out a little bit of each ingredients and wrap it all up like a burrito.

Now, here comes the dipping sauces. I made a peanut sauce, and a fish sauce-

Again, I apologize for the aesthetics of the rolls...

Peanut Sauce-
4 tbs creamy peanut butter
3 tbs hoisin sauce
1 tbs water
1 tsp sriracha sauce
chopped peanuts

Mix peanut butter, hoisin sauce, sriracha, and water together. Top with chopped peanuts.

Fish sauce-
  • 4 teaspoons fish sauce
  • 1/4 cup water
  • 2 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • 2 tablespoons white sugar
  • 1/2 teaspoon srircha

Simply mix every ingredient together.

Note: For all the ingredients that you have no idea where to get from, they are all in the Asian supermarket.
